Fish Bites

Ingredients:

3 cod fillets cut into 3 (can use any other fish fillets)

1 tub double cream (7floz)

1 green chilli chopped

1 tsp cumin seeds

1 1/2 tsp salt

1 cup chopped coriander leaves with stem

200g Japanese breadcrumbs (normal breadcrumbs will do)



Method:

In a blender add all the above except the fish and breadcrumbs. Blend then pour into a bowl, add the fish into the cream mixture and let it sit for an hour or so.


In a wide shallow bowl add the breadcrumbs in, take 1 piece of fish and shake off the extra cream, dip in the crumbs and coat evenly, repeat with all fish. Did scarf then remaining cram mixture.

In a baking try layer with baking paper, spray with oil, place the fish in the tray and spray the fish with oil (generously), bake in the oven @200c for about 25-30min or until golden brown colour. (Timing will vary depending on oven). Serve with a slice of lemon . Enjoy 😊.
